Traditional Wood Fire Pizza

Cellar Door pizzas are made with only the finest San Marzano tomato sauce.  Caputo 00 flour, mozzarella fior di latte, sea salt, and extra virgin olive oil.  We use an ultra slow proofing method to achieve the best flavor in our dough, and as a result can only produce a limited quantity of 50 pizzas per day due to the time intensive process.

We use one of the world’s greatest pizza ovens, a Woodstone. It combines the 6,000-year-old tradition of a stone hearth with modern improvements to make the most consistent pizza possible. It has exceptional heat transfer through its single slab, 4-inch thick stone hearth, traditional dome shape, and an open flame. We exclusively burn apple and cherry hardwoods for premium flavor. This creates an intense heat, which caramelizes the pizza creating a superior and unique taste. Our pizza has a “fire kissed” crust and is cooked through, unlike the uneven cooking process in ordinary wood or coal ovens.
